Fire Cider

I'm a historian and fermenter of ideas, of skills, of foods.
My medical training included the opportunity to study from original sources in the worlds of botany, herbalism and medicine.
So many ideas reoccur in history. based on the items available for a culture to use for medicine.
Apples grow just about everywhere.

Prep Time:10 minutes
Cook time: 6 weeks
Yield: 1 quart

Equipment needed: cheesecloth, strainer
Ingredients:
1 quart organic apple cider
1/2 cup fresh horseradish root-grated
3 cloves garlic chopped
1/2 cup of  white onion chopped
1/2 cup of ginger-chopped 
3 whole cloves
2 Cinnamon sticks
1/2 teaspoon red pepper flakes
1/4 cup honey
Instructions:
1. using a large mouthed jar, stir together all ingredients.
2. cover the mouth of the jar with cheesecloth.
3. place jar in 60 degree area for 6 weeks, stirring daily.
4. Strain the vinegar
5. Store for no longer than 6 months.
Use daily for immune boosting, with an extra dose for any day when you feel a cold coming on.
