Lemon Marmalade Recipe- British Style

This Lemon Marmalade Recipe-British style brings a softer, sweeter jam to the tea or breakfast table.
Starting out by simmering whole organic lemons in water till they are soft brings lots of moisture to the overall jam.

The one part of making the British version that I didn't care for was the difficulty of slicing the cooked lemon peel as thinly as I hoped. It's really tricky to work with slippery peels.

But getting the seeds, or in British pips, out was super simple. The pips are saved and simmered with the jam to increase the pectin. By adding an equal weight of sugar as the weight of peels, this version of the marmalade has a bit more sugar than the American version.

Lemon Marmalade Recipe - British Style

2 ingredients and time create this special marmalade with all the health benefits of citrus peel bio-flavonoids.

Yield: 4 pints
Equipment 2 large stockpots, canning jars, canning jar funnel, lid lifter, jar lifter
Ingredients:
6 large organic lemons-scrubbed
Sugar - same weight as lemons
Water
Directions:
Prepare your jars for filling, following this posts information.
1. Place lemons in pot and cover with water.
2. Cook till the lemons are soft, the peel tender (about 30 minutes)
3. Drain lemons and discard water. (I save it to use as a counter cleaner with a bit of vinegar)
4. Chop lemons and place pips (seeds) in a tea strainer or cloth bundle.
5. Weigh lemons and add an equal amount of sugar
6. Place lemons, sugar and pips  in stockpot
4. Cook till the mixture in stockpot reaches 218-220°F or till it gels on spoon. Discard pips (seeds)
5. Fill hot jars, add lids and twist on bands.
6. Return the marmalade jars to the water bath and allow to simmer for 10 minutes.
7. Remove the jars from the water bath and let cool on counter.
8. The lids will give a little pop as they seal.
