Crisp and Tender Orange Waffles-Gluten Free, Dairy Free

Waffles are my daughters "special" breakfast.

Many typical treat foods are off limits on a gluten free diet, or take more complicated creation to be enjoyed gluten free, like English muffins, donuts, danish or muffins.

I've made all of these gluten-free, but frequently the amount of time it takes to produce the perfect muffin is a bit longer than I have on a typical morning before school .

One of our daughters plays bass. Jazz band meets at SIX am everyday, which is incredible for a group of high schoolers.

She deserves treats, at least once a week, especially when some classmate has brought in donuts one more time to share.
Back to that situation of too much time to make the perfect gluten free treat.  Unless I want to get up at 5am to have hot donuts, they just aren't happening.

Luckily for me, waffle batter is wonderful when stored overnight in the fridge, meaning waffles happen anytime.
These make her especially happy, since they don't have any dairy.
She tends to top them with peanut butter as well as the compound butter. She wants the extra protein to keep her athletic metabolism, and 18 hour day going.

Now, this waffle batter is full of olive oil which means it thickens in the fridge.  Do not be scared to spread the batter on the waffle iron to begin to bake.

Above are pictures of my current waffle irons.  I love these ceramic waffle irons. Why? Because these are NOT covered in non-stick chemicals.
Those non stick chemicals end up in your food each time the waffle iron is use, and they aren't safe.

Orange Waffles

Combining a crisp exterior with tender insides, these orange waffles bring a brightness that compliments both breakfast and dinner uses.

Prep Time:5 minutes
Cook time: 10 minutes
Yield: 4 waffles

Equipment needed: Waffle Iron
Ingredients:
142 grams (1 cup)gluten-free white flour mix
165 grams (1 cup) gluten-free whole grain flour mix
1/2 teaspoon salt
15 grams (1 tablespoon) baking powder
10 grams (1 teaspoon)Psyllium husk
50 grams (1 tablespoon) organic cane sugar
106 grams (1/2 cup) Olive Oil
4 eggs-beaten
230 grams (1 cup) almond milk
Grated peel of one organic orange
Instructions:
1. Preheat waffle iron according to manufacturer's instructions
2. Stir together the flours, salt, sugar and psyllium husk till one color.
3. Beat in the olive oil, eggs, almond milk and orange peel. Depending on the moisture content of your flours, you may need another 1/4 cup of almond milk to create a smooth, pourable texture.
4. Pour correct amount of batter per manufacturer's instructions, (my waffle iron takes 1/2 cup of batter per waffle)
5. Cook for 4-5 minutes till golden brown
6. Serve with Cranberry Orange Honey Butter for breakfast
