Plum Cake Gluten-Free

Gluten-Free Plum Cake

When the tree next door starts to look like it is covered in fat, purple Easter Eggs, that is when I bring out this recipe.
When I’ve made all the chutney, jam and sauce to last for the winter, this is the recipe I reach for to use these amazing fruits.
This simple cake is my favorite way to enjoy fresh Italian Prune Plums, especially because these freeze beautifully.

This buttery cake combines tart and tangy fruit and soft cake sprinkled with coarse sugar with just a touch of almond.

Gluten-Free Plum Cake
 
Gluten-Free Plum Cake- Adapted from the NY Times Recipe : Gluten Free Plum open faced cake

Ingredients
  • 1 stick of unsalted butter
  • Placing the plums
  • 90 grams (1/2 cup plus 1 tablespoon)brown sugar
  • 4 grams (3/4 teaspoon)baking powder
  • 3 grams (1/2 teaspoon) salt
  • 40 grams (1/4 cup plus 2 tablespoons) almond meal
  • 60 grams(1/2 cup) sorghum flour
  • 20 grams (2 tablespoons plus 1 teaspoon)millet flour
  • 15 grams (1 tablespoon plus 1 teaspoon)sweet rice flour
  • 20 grams (2 tablespoons) potato starch or tapioca flour
  • 30 grams (1/4 cup) raw buckwheat flour- grind your own from green buckwheat groats- do not use regular buckwheat flour
  • 3 large eggs
  • ½ tsp almond extract
  • 1 teaspoon raw sugar
  • 10 Italian plums (fresh prunes) washed and split in half.
Instructions
  1. preheat oven to 350
  2. Grease a 10 inch springform pan.
  3. Stir together all the ingredients except plums and raw sugar in a mixing bowl.
  4. Beat for one minute.
  5. Smooth the batter into the springform pan.
  6. Place plums, cut side down onto the batter, no need to press them down.
  7. Bake 35 minutes.
  8. Let cool before cutting.

  11. This is a gluten free adaptation of Florence Fabricant's open faced plum cake. I reduced the fat a bit and added more fiber by using almond meal and whole grain flours. The plums soften and settle into the middle of the cake as long as you don't crowd them. This cake freezes beautifully.

This cake is perfect for a pot luck or breakfast.
